Classic fruit salad recipe

  • 2 envelopes unflavored gelatin
  • 3/4 cup cold water
  • 1 cup reduced-calorie cranberry juice cocktail
  • 1/2 cup splenda granular
  • 1 can (8-ounce size) crushed pineapple, packed in fruit juice, drained
  • 1 cup chopped fresh or frozen cranberries
  • 2 small cored, unpeeled, and chopped Red Delicious apples
  • 1 1/2 cup finely diced celery

Preparation

In a small saucepan, sprinkle dry gelatin over water. Soften for a few minutes. Cook over low heat until gelatin is completely dissolved, stirring often. Remove from heat. Stir in cranberry juice cocktail. Pour mixture into a large bowl and add splenda and pineapple. Mix well to combine. Stir in cranberries, apples and celery. Pour mixture into an 8-by-8-inch dish. Refrigerate until firm, about 3 hours. Cut into servings.
