Colorful vegetable salad
Ingredients
- 2 med. potatoes
- 1 c. diced or sliced carrots
- 1 c. shelled green peas
- 1 pimiento, chopped (optional)
- 1/4 c. minced onion
- 2 tbsp. minced parsley
- 1/4 c. oil
- 2 tbsp. vinegar
- 1/4 tsp. salt
- Dash ground black pepper
- 1/4 tsp. dried basil, crushed
- Pinch dry mustard
Preparation
Steam potatoes in jackets. Peel and dice them while they are warm and place them in a bowl. Steam carrots and green peas. Combine with potatoes and add minced onion, minced parsley and chopped pimiento (optional). Combine in jar vinegar, oil, salt to taste, dash ground pepper, dried and crushed basil and pinch dry mustard. Pour over vegetables, cover and chill well. Serve the colorful salad alone or over lettuce
