Fruit salad recipe
Ingredients
- 1 can (20 oz) pineapple chunks
- 2 quarts red apples, chopped
- 1 1/2 cups pecans, toasted
- 2 cups green seedless grapes, halved
- 1/2 cup fresh parsley, chopped
- 1 cup celery
For dressing:
- 1 tablespoon lemon juice
- 1/4 cup sugar
- 1/2 stick butter
- 2 tablespoons cornstarch
- 1 cup mayonnaise
Preparation
Drain the pineapple chunks and place them in a large bowl. Add in the red apples, pecans, grapes, parsley and celery. In a sauce pan, pour in the pineapple juice and stir in the lemon juice, sugar and butter. Boil over medium heat. Add cornstarch and some water in mixing bowl. Combine and mix well to form a smooth mixture then add into the sauce pan with the boiling juice. Switch to low heat and let it cook until the mixture is thick and smooth. Let it cool down for a few minutes then whisk in the mayonnaise. Pour in the chilled dressing into the large bowl with fruits. Mix well. Serve fruit salad.
