Pasta Fruit Salad Recipe
- 1/2 box acini de pepe pasta noodles
- 1 (20 oz.) can crushed pineapple
- 2 sm. cans mandarin oranges
- 3/4 c. sugar
- 2 eggs, beaten
- 3 tbsp. flour
- 1/2 tsp. salt
- 1 (8 oz.) container Cool Whip
Preparation
Cook pasta according to directions, drain, and then rinse in cold water. Drain and save the juice from the pineapple and oranges. Mix this juice with the sugar and the eggs. Sift together flour and salt. Add to juice mixture. Over medium heat, boil the juice mixture, stirring constantly. Remove from heat, when thick, and add the noodles. Chill overnight, then add the fruits and Cool Whip and mix thoroughly. Serve pasta fruit salad.
